Overview

This combination of sweet potato, granny smith apple, and red onion is a favorite of mine. A good choice for Phase One breakfast or a side dish. Phase One-Repair

Sweet Potato Breakfast Hash

Ingredients

  • 2 tablespoon(s) Optional herbs: fresh or dried sage or thyme, or cinnamon or nutmeg

  • 2 large sweet potatoes or yams, peeled and chopped into 1/2-inch pieces

  • 3 celery stalks, chopped into 1/2-inch pieces

  • 4 green ot any) apples, peeled, cored, and chopped into 1/2-inch pieces

  • 1 red onion, diced

  • 2 tablespoon(s) coconut oil

Steps

Stove Top:

1. In a medium saucepan, bring approximately 3 cups of water to a boil. Add celery and simmer for 3 minutes.

2. Add sweet potato and simmer for another 10 minutes. Drain and set aside.

3. Heat the oil in a large steel or cast-iron skillet and add onion. Cook for about 5 minutes.

4. Add the apples and the sweet potato/celery mixture and press entire skillet into a single layer. Cook on medium heat undisturbed for 2 minutes. Then mix vegetable around and repeat the process several times more until they are well caramelized, about 30-40 minutes total. Serve warm with a smoothie or breakfast sausages.


Crockpot:

  1. Put all the ingredients in a crock pot/slow cook for 4 hours high/8 hours low heat. Mix and enjoy!

  2. Remove from heat and stir in herbs. Serve. Enjoy!

Instapot 

  1. Put all the ingredients in an Instapot with 1/2 cup water. Set on low heat for 4 minutes. Serve. Enjoy!
