Brownie Bites-No Bake!

Overview

Raw cacao, dates and nuts are the basis of this delicious little snack. Eat sparingly after your cleanse when you want dessert without the calories and sugar! Inspired by Amy Myers, MD recipes.
You can get raw cacao at the health food store, or use unsweetened organic cocoa powder.

Brownie Bites-No Bake!

Ingredients

  • 1 cup(s) raw cashew pieces, unsalted

  • 1 cup(s) raw pecans, unsalted

  • 20 medjool dates, pitted

  • 1/3 cup(s) raw cacao, or unsweetened organic cocoa powder

  • 1 1/2 teaspoon(s) organic peppermint OR vanilla extract

  • 1/4 teaspoon(s) unrefined sea salt

  • 1/2 cup(s) unsweetened shredded coconut or flakes of toasted coconut

Steps

1. Place a sheet of parchment paper on a cookie sheet.

2. Easy way to pit a date: Boil 1 quart water, add the dates for 30 seconds. Strain with a colander. They should be soft enough that the pits come out easily.

3. Put the cashews in a food processor with the mixing blade and pulse until you get crumbles. About 45 seconds to a minute.

4. Add the pecans, dates, cacao, peppermint, and salt to the food processor and pulse for about 2-3 minutes, scraping the sides with a spatula to mix well.

5. Use a Table Spoon to scoop up the mixture and roll into balls.

6. Roll them into the shredded coconut* then place on the parchment paper.

7. Place into the refrigerator for 30 minutes. Enjoy!

8. *I save the leftover shredded coconut in a plastic baggie for future Brownie Bites.
