Line a baking sheet with parchment paper and place the beets. Sprinkle the coconut oil on them and toss to coat. Bake for 20 minutes and toss. Cook for another 15-25 minutes or until they are soft. Remove and cool when they are done.
Whisk the olive oil, apple cider vinegar, and salt and pepper in a bowl, or make your favorite dressing.
Add the lettuce, blackberries, avocado, and other favorite ingredients. Toss and serve. Enjoy!
