Cauliflower "Fried Rice"

Cauliflower makes a great base for this healthy version of fried rice.

Shred the vegetables in a food processor, or chop into small pieces. Look for coconut aminos in the ethnic food section at you local health food store. They are a wheat free, soy free, variation of soy or tamari sauce.



For 4 people ()


  • 1 head of cauliflower
  • 1 teaspoon(s) coconut oil
  • 2 teaspoon(s) toasted sesame oil
  • 1 zucchini, diced or shredded in a food processor
  • 1 garlic clove, diced
  • 2 teaspoon(s) fresh ginger, peeled and zested
  • 3 scallions, minced
  • 1/2 bunch lacinado or dinosaur kale, de-stemmed and shredded.
  • 1 tablespoon(s) coconut aminos
Cooking time

Cauliflower "Fried Rice" Directions

  1. Shred head of cauliflower in a food processor. 
  2. In a medium saucepan or pan, melt the oils. Add the zucchini and cook for 2 minutes.
  3. Add the rest of the vegetables and cook for another 3-5 minutes.
  4. Take off the heat and add the aminos, stir well. Enjoy!
