Chicken and Kale Crock Pot Stew

Crock Pot soups are an easy way to make a nutritious and filling meal. Try either curly or dinosaur kale for this recipe.


For 4 people ()


  • 2 pound(s) boneless, skinless chicken thighs (free range, organic is best)
  • 1 sweet potato or yam, peeled and chopped into 1 inch pieces
  • 3 carrots, peeled and chopped into half moons
  • 1 yellow onion, chopped
  • 5 cup(s) organic chicken broth ( yeast free, no salt added)
  • 3 garlic cloves, minced
  • 2 teaspoon(s) fresh or dried thyme
  • 1 bunch kale, de-stemmed and chopped into pieces
  • 1 dash unrefined sea salt and pepper

Chicken and Kale Crock Pot Stew Directions

  1. In a 5 quart or larger crockpot, add all the ingredients, except for the kale.
  2. Cook on low for 8 hours, or cook on high for 4 hours.
  3. 1/2 hour before the end, add the kale.
  4. Serve and enjoy!
